One Pot Burritos

In our family we have an on going joke that when there are tons of dishes and the kitchen is a mess it means the meal is going to be super good.

This recipe definitely defies our family joke. This recipe all made in one pot so it makes clean up super quick and easy.

This makes the perfect week night meal, especially because leftovers reheat very well.

Anytime I leave town I make a big batch of these and my husband eats it all week while I’m gone… a well-fed husband is always a good thing:)

 

One Pot Burritos

Serves: 6 servings Prep Time: 5 minutes Cooking Time: 15 minutes

Ingredients

  • 2 large chicken breasts, cut into pieces
  • 1 T olive oil
  • 1 tsp minced garlic
  • 1 small onion, diced
  • 2 bell peppers, diced
  • 1 (15 oz) can hot chili with beans
  • 1 (15oz) can tomato sauce
  • 1 C instant brown rice
  • Gluten free tortillas or flour tortillas
  • Toppings: cheese, sour cream, salsa, lettuce

Instructions

Sauté chicken in olive oil and garlic until cooked through-set aside.

Sauté diced onion and peppers in oil and garlic.

Stir in chili and tomato sauce. Add chicken back into pan.

Pour rice on top of sauce mixture. Let simmer until rice is cooked and mixture has thicken- approx. 10-15 minutes, stirring frequently.

Place burrito mixture in tortillas, top with cheese, sour cream, salsa, lettuce.

Notes

If you want a low carb option, eliminate the tortillas and eat this as a burrito bowl.
