Sausage and Kale Stuffed Sweet Potatoes

Do you ever get an idea in your head and can’t stop thinking about it until you execute it? That is exactly what happened to me with these Sausage and Kale Stuffed Sweet Potatoes!

I know this may sound like a different combination for the common eater, but trust me… they are so easy to make and absolutely delicious! Keep reading for the full recipe!

I was meal planning with my husband Michael and his only request for the week was something with sweet potato. We started thinking about all my usual recipes with sweet potatoes in them but none of them were sounding good. I wanted to make something new and different but couldn’t figure out exactly what.

Then this recipe idea hit me! I put it on my menu to make on Thursday night. On Sunday we went to the grocery store, like we always do. I got all the ingredients we needed for Thursday- sweet potatoes, spicy Italian sausage, kale, onion and Mozzarella cheese. But then Monday rolled around and I knew I couldn’t possibly wait until the end of the week to try this recipe. I had to make it right then! So I whipped it up as I waited for Michael to get home from work. As soon as he walked in the door we sat down to try it. The consensus… we both LOVED it!

The spice of the sausage and the bite from the apple cider vinegar mixed with the sweetness from the potato was EXACTLY what I wanted! It’s not very often that the first try of a new recipe comes out exactly how I envisioned, but in this case it absolutely did.

Needless to say, these sausage stuffed sweet potatoes will definitely be added to our regular rotation of meals.

Sausage and Kale Stuffed Sweet Potatoes

Serves: 4 Prep Time: 5 minutes Cooking Time: 20 minutes

Ingredients

  • 4 large sweet potatoes
  • 1 lb spicy ground Italian sausage, pork or turkey
  • 1/2 red onion
  • 1 small bunch of kale
  • 3 cloves of garlic
  • 1/2 tsp black pepper
  • 1/4 C apple cider vinegar
  • Mozzarella cheese for topping

Instructions

1. Pierce sweet potatoes with a fork. Microwave for 6-8 minutes, or until sweet potatoes are softened. *(See notes for other cooking options).

2. While potatoes are cooking, cook ground sausage in skillet over medium-high heat until cooked through.

3. Add onion, garlic and kale to sausage. Cook until onion has softened and kale has wilted.

4. Add apple cider vinegar, simmer for 1-2 minutes.

5. When sweet potatoes are done cooking, cut them in half lengthwise and scoop out a small amount to allow room for sausage mixture.

6. Scoop sausage mixture into each sweet potato cavity. Top with Mozzarella cheese.

Notes

You can also cook sweet potatoes in oven at 425 degrees for 45 minutes. Or cook in instant pot with one cup of water on manual for 15 minutes.
