Nutty Granola

Beware this Nutty Granola is about to be your next snacking addiction! It is way better AND healthier than anything store bought!

Did you know that most store bought granola is full of sugar and preservatives? It’s delicious but there are hidden ingredients that aren’t very good for you. That’s why I never buy granola from the store. Instead I make many variations of my own healthy, homemade granola . This nutty granola is one of my absolute favorites. It is different from many granolas in the fact that nuts are the main ingredient instead of oats, giving it an additional crunchy texture.

This recipe is packed full of healthy ingredients. See the benefits of some ingredients here:

Almonds- Vitamin E, fiber, antioxidants, magnesium
Cashews- magnesium, copper,
Walnuts- Omega-3 acids, antioxidants
Oats- fiber, healthy carbs, antioxidants
Cinnamon- anti- inflammatory

My younger brother, Colton, especially loves this recipe. I first made it for him when he was going to college, playing lacrosse, living with a bunch of guys, not cooking much but always hungry. He can sometimes be particular so I wasn’t sure what’d he think of a new recipe that was a little more earthy than my typical granola . But to my delight he was absolutely crazy about it!

This is the sweet/ funny text he sent me after trying it.

“Alright you are gonna think this is Dad text for sure, but as a I sit here with the inability to stop myself from finishing this bag of granola that you made by just eating in plain, I gotta think that you need to start mass producing this stuff as a business. I love your food blogging and you should keep doing that but I honestly think you should consider making this stuff and selling it. It is so unique and healthy and I 100 percent would buy it over any other types of brands at a store. Or at least you could start selling it like at a farmers market.”

How sweet is he? Such a supportive brother.

Nutty Granola

Ingredients

  • ½ C. almonds, unsalted
  • ½ C. cashews, unsalted
  • ½ C. walnuts, unsalted
  • ½ C. unsweetened coconut flakes
  • 1 C. old fashion oats, gluten free if needed
  • 1/3 C. pumpkin seeds or pepitas
  • 1/3 C. unsalted sunflower seeds
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ C. coconut oil
  • 1/3 C. honey
  • 2 tsp vanilla

Instructions

Preheat oven to 300 degrees.

Place almonds, cashews, walnuts, and coconut flakes into food processor- pulse a few times to chop nuts (do not over blend). Dump into large bowl.

Add oats, pumpkin seeds, sunflower seeds, and spices. Mix together.

In a separate bowl, add melted coconut oil and honey- microwave for 30 seconds. Add in vanilla and whisk together.

Pour wet mixture over dry ingredients and stir until mixture is well coated.

Place on a parchment lined baking sheet. Bake for approx. 35 minutes- stirring every 10-15 minutes. (Watch closely near end of baking as cook times may vary between ovens.)
