Thai Peanut Chicken Wraps

Do you have kids that love to help in the kitchen? These Thai Peanut Chicken Wraps are the perfect recipe to get them involved in. They will love helping shred the chicken, stir the sauce, and sauté the slaw.

My love for cooking really started to blossom when I was in elementary school. I had a Pampered Chef kids cook book that I would flip through looking for the perfect recipe to make for my family. I so badly wanted to make something by myself that I could serve everyone for lunch or dinner.

The first thing I made by myself was an Italian Pasta Salad. I was so proud of myself that I successfully made a whole meal on my own. My parents made me feel like I was the best chef in the world. They ranted and raved about what I made. (I’m sure it wasn’t anything great but they wanted to make me feel like I had just won Master Chef). My mom specifically said, “This is delicious, Mads. You can cook dinner for me anytime!” This has stuck with me over all these years. Without these great words of encouragement I may have not continued cooking.

If you have kids and can get them involved in the kitchen, DO IT! You will love the time you spend together in the kitchen and who knows, they might make your life easier by making you dinner;)

As I got older I started cooking more and would make dinner for my family more frequently. These Thai Peanut Chicken Wraps were a recipe I would regularly make because everyone loved them. Feeding 2 hungry brothers, plus my parents I would double this recipe to make sure everyone got enough.

Thai Peanut Chicken Wraps

Serves: 4-5 servings Prep Time: 5 minutes Cooking Time: 10 minutes

Ingredients

  • 1 lb chicken, cooked and shredded- or use rotisserie chicken
  • 1 T olive oil
  • ¼ tsp pepper
  • 1 tsp garlic salt
  • 1 tsp. ginger
  • 1 onion, diced
  • 1 bag broccoli slaw (approx. 4 cups)
  • Tortillas, whole wheat or gluten free if needed
  • Peanut Sauce:
  • 3 T honey
  • 1/4 C creamy peanut butter
  • 3 T gluten free soy sauce
  • 3 T water
  • 2 T oil
  • 1 tsp. minced garlic

Instructions

Add all sauce ingredients to small sauce pan and heat until peanut butter and honey have melted and sauce is well combined. Set aside.

In a large skillet, heat olive oil. Add chicken, spices, and onion. Sauté until chicken is warmed through and onion is softened.

Add broccoli slaw and peanut sauce- reserving some to put on top. Sauté until slaw is slightly softened and warmed through.

Serve in tortillas. Top with additional sauce, if desired.

Notes

This is a great meal to use for meal prep. If you aren't going to be enjoying it right away, leave the sauce on the side and add when you are going to eat. If you add the sauce and don't eat right away the slaw will get soggy.
