Mexican Pizza

It seems like a majority of the population’s favorite food is pizza. I love pizza as well, but one of my ultimate favorite foods is Mexican food. So why not combine them both? This Mexican pizza recipe is sure to please the whole family as each person can add whatever toppings they would like.

Do your kids love to get involved in the kitchen? I know as a little girl I always loved to help my mom with whatever she was making. This is a great recipe to use for a fun build-your-own bar. Let your kids top their pizza with whatever toppings you have on hand. Make it a full Mexican extravaganza by having chips and salsa as an appetizer to pass the time quickly for impatient kiddos. Maybe mom can even enjoy a Margarita as she waits;)

This recipe is also very modifiable for each flavor preference. Never get sick of these pizzas by switching up the toppings. You can switch up your Mexican pizza by using black refried beans instead of traditional refried beans, substitute ground beef for the chicken, skip the meat and use roasted veggies as your main topping, the list goes on and on. Be sure to leave me a comment below if you come up with another great substitution or addition!

My main suggestion for this recipe is to keep a close eye on the tortillas as they bake to your desired crispness. One minute they won’t be baked at all and then all of a sudden they can be totally brown and crispy. Keep an eye on them as baking times will vary depending on your oven. Keep in mind that they will continue to crisp up as you bake them for a second time with the toppings added. I have noticed that my thin, gluten free tortillas definitely crisp up faster than a traditional flour tortilla. So be especially watchful if you are using a gluten free tortilla.

Mexican Pizzas

Serves: 4-5 servings Prep Time: 5 minutes Cooking Time: 15 minutes

Ingredients

  • 8” Flour tortillas or gluten free if needed
  • 1 can refried beans
  • 1 (12.5 oz) can chicken breast in water*, drained and shredded
  • 1.5 c. shredded cheese
  • Toppings: Lettuce, tomato, green onion, sour cream, salsa

Instructions

Preheat oven to 350 degrees.

Place tortillas on baking sheet, making sure to not overlap. Spray each tortilla with pam spray. Bake for 8-10 minutes until starting to crisp, flipping and spraying again half way through.

While tortillas are crisping up, drain chicken breast and shred into pieces. Mix with refried beans and microwave for 1-2 minutes until heated through.

Once tortillas are crisped to your liking, spread the bean and chicken mixture onto tortillas. Top with cheese.

Place back into oven for 3-5 minutes or until cheese is melted.

Top with lettuce, tomato, green onion, sour cream and salsa.

Notes

*Canned chicken breast in water can be found at any grocery store in the canned food aisle next to the tuna. They are fully cooked and ready to eat so they make for a quick addition to any meal.
