Easiest Ever Chicken Tacos

Are you a picky eater or have kids who are picky eaters? This could be a new house favorite for you.

These tacos are so simple and with each person building their own it’s easy to tailor to individual preferences.

The other great thing about these are the fact they come together in about 15 minutes.

Another variation I make with this recipe is doing a taco bowl. I crunch up the taco shells in the bottom of a bowl and then put all the toppings on top of that. This less messy version helps if you are in a rush and have to run out the door.

 

 

 

Easiest Ever Chicken Tacos

Serves: 4 servings Prep Time: 5 minutes Cooking Time: 10 minutes

Ingredients

  • 2-3 large chicken breasts, diced
  • 1 T vegetable oil
  • ½ T minced garlic
  • ½ onion, diced
  • ½ C tomato puree or ketchup
  • 2 tsp chili powder
  • 2 tsp cumin
  • 8 taco shells
  • Shredded cheese, lettuce, tomatoes, sour cream, salsa

Instructions

Cook chicken with oil and garlic in a skillet over until no longer pink.

Add onion and cook another few minutes.

Add tomato puree (or ketchup), chili powder, and cumin.

Simmer and stir occasionally until chicken is coated and not much sauce is in bottom of skillet.

Warm taco shells according to package directions.

Scoop chicken into shells and top with cheese, lettuce, tomato, sour cream, and salsa.
