Cheesy Spinach Bites

Are you having company over this weekend? Make these Cheesy Spinach Bites as your appetizer! These little bites are incredibly simple to make but are sure to wow your guests.

I first made these for Christmas Eve last year. I’m a total people pleaser so I was looking up recipe after recipe to find something that would please my grandparents, siblings, mom and dad, aunts, uncles, and young cousins. I know it’s impossible to please everyone but I wanted to try my best. I decided to risk making a brand new recipe for a major holiday celebration… not something I would usually do in fear of failure! But thank heavens it turned out wonderfully! Everyone loved them! They were gone in less than 5 minutes. We had one person running late and we literally had to hide one for them to try because they were going so fast. What a wonderful problem to have as a hostess.

The thing I love most about this recipe is that you can make these cheesy spinach bites ahead of time and keep them “raw” in the fridge and then pop them into the oven right before your guests arrive. This makes the hosting life so much easier! I hate the feeling of scrambling around trying to clean everything up right before people come over. But I also hate the worry of the food being cold by the time people arrive. This cheesy spinach bites recipe will eliminate both those experiences for you, leaving you fully prepared for your company.

Cheesy Spinach Bites

Serves: 20-30 Bites (depending on size) Prep Time: 15 minutes Cooking Time: 15 minutes

Ingredients

  • 3 eggs
  • 3 C. fresh spinach (approx. half a bag)
  • 1 C. gluten free bread crumbs- I use corn flake crumbs
  • 1/3 C. shredded cheddar cheese
  • 1/3 C. shredded mozzarella cheese
  • 2 green onions, diced
  • ½ bunch of parsley, diced
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Marinara sauce

Instructions

Place spinach in a large sauté pan with 1 tablespoon of water. Cook over medium heat until spinach has wilted, stirring occasionally. This should only take a few minutes.

Chop wilted spinach into pieces. Place into large bowl.

Add eggs, bread crumbs, cheese, green onion, parsley and spices. Mix until well combined.

Form into 1 inch balls and place on a parchment lined baking sheet. ( I use a small cookie scoop to keep all balls the same size)

Bake at 350 degrees for 15 minutes.

Serve hot and dip in marinara sauce.
